The five-minute closing walk. Same order every night. It works because it is boring.

  1. Back door. Latch it, then test it with your hand. Looking at it does not count.
  2. Walk-in. Door shut, light off, temperature logged.
  3. Liquor. Locked. Key on your ring, not on the nail.
  4. Register. Drawer open and empty, so nobody has to guess.
  5. Grease bin. Lid down, lock on. Stolen oil is a real crime.

What we add

The Spirits Cabinet Patrol guards the liquor and the cash drawer. The Grease Reaper watches the oil. You get a report in the morning, even on a quiet night.

Turn the music off. A silent dining room is the best alarm there is.
